Proper storage is essential to maintain the quality, flavor, and safety of bulk dried herbs. Follow these guidelines to maximize shelf life.
Temperature
Store herbs at 15-25°C (59-77°F). Avoid temperature fluctuations which can cause condensation and moisture buildup. Never store herbs near heat sources or in direct sunlight.
Humidity
Maintain relative humidity below 65%. Use dehumidifiers in humid climates. Moisture is the primary enemy of dried herbs, leading to mold growth and quality degradation.
Light
Store in dark conditions or opaque containers. UV light degrades volatile oils and causes color fading. If using transparent containers, keep them in dark storage areas.
Air
Minimize air exposure. Use airtight containers or properly sealed bags. For large quantities, nitrogen flushing can extend shelf life by preventing oxidation.
Container Selection
Use food-grade containers made of glass, food-grade plastic, or lined metal. Avoid containers that may impart odors. Multi-layer bags with moisture barriers are ideal for bulk storage.
Shelf Life Guidelines
When stored properly, most dried herbs maintain quality for 18-24 months. Seeds and spices can last 24-36 months. Always check for signs of quality loss: faded color, weak aroma, or off-flavors.
